Winter Harvest Salad with Cosmic Crisp® Apples

Ingredients

  • 1 bunch kale, chopped
  • 1 cup cooked quinoa
  • 1 cup diced butternut or acorn squash, roasted
  • 1 Cosmic Crisp® Apple, julienned
  • ¼ cup toasted pumpkin seeds
  • ¼ cup dried cranberries
  • ¼ cup crumbled feta
Maple Dijon Vinaigrette
  • ¼ cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 2 tsp dijon mustard
  • 1 large clove garlic, grated
  • ½ tsp dried rosemary
  • Pinch salt and pepper, to taste

Directions

  1. Make the vinaigrette: Add all ingredients for the maple dijon vinaigrette to a medium bowl or jar. Whisk or shake with the lid on until smooth and emulsified, about 15 seconds.
  2. Massage the kale with a very small drop of olive oil to make it tender.
  3. Assemble the salad: Divide the kale and quinoa between two bowls. Top each bowl with the squash, apple, pumpkin seeds, dried cranberries, and feta.
  4. Drizzle with desired amount of dressing and enjoy!
