Traditional Cosmic Crisp® Apple Pie

Ingredients

  • 5 cups peeled and thinly sliced Cosmic Crisp® Apples
  • ⅓ cup brown sugar
  • ⅓ cup white sugar
  • ¼ cup all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
Pie Crust
  • 2 ½ cups all purpose flour
  • 1 cup unsalted butter, chilled and cut into cubes
  • 1 tsp salt
  • ½ cup cold water
Egg Wash
  • 1 egg whisked with a splash of water

Directions

  1. Make dough: Add the flour, butter, and salt to a food processor. Pulse until you get coarse, pea size pieces of flour-coated butter. Transfer the flour and butter mixture to a large bowl and slowly add the water, combining a few spoonfuls at a time, until the dough is well incorporated and no longer dry. The dough should still be flaky, be careful not to add too much water. Bring together in a ball, being careful not to overwork the dough. Divide in half and shape into two disks. Cover each disk completely with plastic wrap and chill in the fridge for at least one hour.
  2. Preheat the oven to 425 degrees Fahrenheit.
  3. Roll out both of the pie crusts separately on a floured surface to large circles big enough to fit in the pie pan. Press into the pie pan, crimping the edges or otherwise arranging as desired. Cut off the excess dough hanging over the edge. Poke the bottom of the pie dough with a fork several times.
  4. In a large bowl, mix together the apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Spoon into the pie pan.
  5. Place the other pie crust over top of the apples, crimping on the edges and using a fork if desired. Brush lightly with the egg wash mixture. Cut off the excess dough hanging over the edge. Cut a slit or X in the center of the top of the pie to allow steam to release while it cooks.
  6. Place the pie pan on a baking sheet to catch any drippings. Transfer to the preheated oven and bake for 15 minutes. Reduce heat to 350 degrees and continue to bake for 35-40 more minutes or until the crust is deeply golden brown and the apples are tender.
  7. Let cool for at least 60 minutes or longer before slicing and serving!
