The Cosmic Crisp® Apple and Peach Aperol Spritz

Ingredients

1 Cosmic Crisp® Apple, finely dice
10 oz fresh or frozen peaches
¼ cup white sugar
½ cup water
Aperol
Prosecco
Sparkling water

Directions

Heat a large skillet over medium-low heat. Add the apples, peaches, sugar, and water. Simmer until the apples and peaches are soft and have slightly cooked down, about 10-15 minutes. Add the mixture to a high speed blender and blend until completely smooth. If the compote seems too thick, add a little water at a time until a pourable consistency is reached.
To make the aperol spritz, pour about 1 oz or desired amount of apple peach compote into a serving glass with ice, then add 2 oz of Aperol.
Top with prosecco until the glass is about ¾ of the way full, then finish it with sparkling water. Garnish as desired and enjoy!
