Sweet Potato + Cosmic Crisp® Apple Galette


  • 2 tbsp butter
  • 2 sweet onions, thinly sliced
  • 1 pie crust
  • 6 ounces goat cheese
  • 1-2 Cosmic Crisp® Apples, very thinly sliced
  • 1 small sweet potato, very thinly sliced
  • Salt and pepper
  • 1 eggs + splash of water, whisked


  1. Heat the butter in a large skillet over medium-low heat. Once melted, add the onions along with a pinch of salt and pepper. Cook down until caramelized and golden, about 20-30 minutes, stirring occasionally. Let cool.
  2. To assemble the galette, place the pie crust on a lined cookie sheet. Crumble the goat cheese evenly over the crust, leaving about 1” around the edges empty.
  3. Spread the caramelized onions evenly over the goat cheese, then layer the sweet potato and apple slices over the onions, alternating between the two. Finish by cracking some black pepper over the top.
  4. Carefully fold the sides of the crust over, and brush with the egg wash mixture.
  5. Bake at 350 degrees Fahrenheit for 30-40 minutes or until the crust is golden brown, and the sweet potatoes and apples are tender.
  6. Let cool for about 10 minutes before slicing and serving.

Note: You should only need about 10 slices each of the sweet potato and apple.
