Sweet Potato Buttermilk Waffles with Cosmic Crisp® Apples


  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • Pinch of salt
  • 1 ½ cups buttermilk
  • ½ cup cooked sweet potato flesh (about 1 small sweet potato)
  • 1 egg
  • 1 tsp vanilla
  • 2 tbsp butter, melted and cooled
  • 1 big Cosmic Crisp® Apple, finely diced
  • Pure maple syrup, to serve
  • Cinnamon, to serve


  1. In a small bowl, whisk together the flour, baking powder, baking soda, and salt until combined.
  2. In a separate bowl, whisk together the buttermilk, sweet potato, egg, vanilla, and melted butter until completely combined.
  3. Fold the dry ingredients into the wet ingredients until just combined, do not overmix. It’s okay if there are some lumps.
  4. Let the batter rest for 10 minutes while you heat your waffle iron.
  5. Place the batter onto your heated waffle iron and cook until crispy and cooked through.
  6. Top the waffles with diced apples, maple syrup, and a generous pinch of cinnamon.
