Single Serve Cosmic Crisp® Apple Spice Tiramisu


  • Ladyfingers
  • Apple cider
  • Apple pie spice or cinnamon, to top
Cream Layer
  • 1 cup heavy cream
  • 2 tsp vanilla extract
  • ⅔ cup mascarpone
  • ½ cup powdered sugar
Apple Pie Layer
  • 1 Cosmic Crisp® Apples, finely diced
  • 2 tbsp brown sugar
  • 2 tbsp salted butter
  • 1 tbsp lemon juice
  • ½ tsp apple pie spice
  • ½ tbsp cornstarch + 1 tbsp water


  1. Heat a medium saucepan over medium heat. Add all ingredients for the apple pie layer except the cornstarch. Saute, stirring occasionally, until the apples are tender as desired. Whisk the cornstarch and water in a separate bowl and add to the saucepan. Cook another 2-3 minutes, until the apples are thickened.
  2. Make the cream layer: Add the heavy cream and vanilla to a medium bowl. Use an electric mixer to whip the cream until it begins to get firm. Add the mascarpone and powdered sugar and continue beating until ingredients are well combined and stiff peaks form.
  3. Break up the ladyfingers so they fit in the bottom of the serving glasses. Dip each piece of the ladyfinger in the apple cider and soak for a few seconds. Place in the bottom of 4 serving glasses.
  4. Spoon some of the cooked apples on top of the ladyfingers in each glass. Follow with a layer of the cream, spread evenly. Repeat with another layer of soaked ladyfingers, then another layer of cream.
  5. Top with a sprinkle of apple pie spice or cinnamon and enjoy!
