Moroccan Chicken & Rice with Cosmic Crisp® Apples

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 lbs chicken thighs, bone-in skin-on
  • 1 medium sweet onion, diced
  • 1 Cosmic Crisp® apple, diced
  • ½ cup chopped dates
  • 2 cloves garlic, minced
  • 1 ½ tsp paprika
  • 1 ½ tsp ground cumin
  • 1 tsp turmeric
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • 1 tsp salt
  • 2 cups long grain white rice
  • 4 cups chicken or vegetable broth
  • Juice of 1 lemon
  • ¼ cup chopped parsley, plus more to serve

Directions

  1. Heat a large deep skillet over medium high heat and add the oil. Season the chicken with a pinch of salt and pepper, then place in the hot pan. Sear for 5 minutes per side until golden brown, then remove and set aside.
  2. Reduce the heat to medium and add the onion, apple, and dates. Saute until the onion and apple are tender, about 5-7 minutes. Add the garlic and saute another minute.
  3. Stir in the spices and rice and saute another 1-2 minutes, until fragrant.
  4. Stir in the broth, lemon juice, and parsley. Bring to a simmer, reduce the heat to low. Add the chicken thighs back to the pan among the rice. Cover and cook for 25-30 minutes or until the rice is tender and the chicken is cooked through to an internal temperature of 165 degrees Fahrenheit.
  5. Serve hot with more parsley on top and enjoy!
