Granola + Cosmic Crisp® Apple Wreaths with Cinnamon Almond Butter

Ingredients

  • 1 Cosmic Crisp® apple
  • ¼ cup almond butter
  • 2 tablespoons water
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 2 pinches sea salt
  • ½ cup granola, preferably with pepitas or pistachios
  • 2 tablespoons finely chopped dried cherries or dried cranberries
  • 1 teaspoon crushed pink peppercorns or crushed freeze-dried raspberries
  • 1 teaspoon flake salt
  • 7 or 8 narrow red ribbons 8 to 10 inches long, if desired

Makes 6-7 wreath snacks, depending on size of apple

 

These sliced apples are a festive, fresh snack for the family to make and enjoy during the holidays. When assembled, they look like holiday wreaths adorned with red, jewel-like cherries and green pepitas or pistachios. For an added touch, tie narrow red ribbons around each wreath to make them just a little more merry. These are best eaten once freshly made.

  1. Place a sheet of parchment in a baking sheet and fit a wire rack on top. Set aside.
  2. Place the almond butter and water in a small bowl and mix with a fork until smooth. Add the honey and mix again. Add the cinnamon and salt and mix until fully combined.
  3. On a cutting board, slice the top and bottom of the apple at the stem and root and discard them. Cut the rest of the apple into 3/8-inch thick slices. You should have 7 or 8 cuts.
  4. Using a 1-inch cookie cutter or apple corer, cut a hole in the center of each slice to resemble a donut. Discard the centers. Transfer the apples to the wire rack. Pat the tops of the apples with a paper towel to wick up any moisture.
  5. With a small spoon or offset spatula, spread about 2 teaspoons of the spiced almond butter on the apple slices. (*if using chocolate, see directions below)
  6. Sprinkle some granola on top of the almond butter, then some dried cherries and peppercorns. Finish with sprinkles of salt.
  7. Place in the fridge for at least 10 minutes to firm up.
  8. Tie the ribbons around each apple for an extra festive touch, if desired.
  9. Transfer to a large platter or cutting board. Serve.

 

*To use chocolate instead of almond butter, place ¾ cup milk or dark chocolate chips in a medium-size microwavable bowl. Microwave in three 30-second intervals, stirring each time with a rubber spatula until smooth. Spread the chocolate onto the apples the same way as the spiced almond butter. Top with the granola, dried cherries, pink peppercorns and flake salt. Place in the refrigerator at least 15 minutes to allow the chocolate to firm up. Serve.
