Cut out a 10-inch circle (1.5-2 inches each) on the top of the bread. Grind the hollowed-out bread in a food processor.
Finely chop the shrimp with a knife.
In a small bowl, combine the chopped shrimp, apple, onion, garlic powder, curry powder, salt, and black pepper. Mix until sticky.
Add breadcrumbs and mayonnaise to the mixture and mix well. Divide it into 10 equal parts and roll them into balls.
Arrange the balls in a heat-resistant container and heat them in the microwave for about 4-5 minutes, or until the shrimp is cooked.
In another small bowl, combine the sweet chili sauce, coconut cream, and peanut butter. Mix well.
Melt the butter in a frying pan over medium-high heat. Add sugar, then add the diced apples to caramelize.
To prepare the Bread and Garnishes (finishing): Preheat the oven with the broiler setting. Fill the hollowed-out bread with the sweet chili peanut sauce. Add half of the shredded white cheddar and place the shrimp apple balls on top. Drizzle the sauce over the balls and sprinkle the remaining cheese over them. Toast the bread in the oven for 3-4 minutes, or until the cheese melts. Remove from the oven and top with caramelized apple and minced mint.
