Curry Accented Shrimp Cosmic Crisp® Apples Ball Bread with Sweet Chili Peanut Sauce and Caramelized Apples

Ingredients

For Shrimp Apple Ball:

  • 1 Cosmic Crisp® Apple, small diced
  • 20 Law Shrimp (21-25 size), peeled
  • 2 tablespoons Onion, minced
  • 1/3 teaspoon Garlic powder
  • 1/3 teaspoon Curry powder
  • 3 1/2 tablespoons Mayonnaise
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Ground black pepper
  • Breadcrumbs; crumbs of hollowed-out bread

For Sweet Chili Peanut Sauce:

  • 4 tablespoons Sweet chili sauce
  • 3 tablespoons Coconut cream
  • 1 1/2 teaspoon Peanut butter

For Caramelized Apple:

  • 1 Cosmic Crisp® Apple, small diced
  • 5 tablespoons Sugar
  • 2 teaspoon Unsalted butter, melted

For Bread and Garnishes:

  • 1 Challah bread, Hawaiian roll, or bread of your choice (*unsliced bread)
  • 1/3 cup White cheddar, shredded
  • 1 tablespoon Fresh mint, minced

 

Directions

To hollow out the bread and make bread crumbs:

Cut out a 10-inch circle (1.5-2 inches each) on the top of the bread. Grind the hollowed-out bread in a food processor.

To make the Shrimp Apple Ball:

Finely chop the shrimp with a knife. 

In a small bowl, combine the chopped shrimp, apple, onion, garlic powder, curry powder, salt, and black pepper. Mix until sticky. 

Add breadcrumbs and mayonnaise to the mixture and mix well. Divide it into 10 equal parts and roll them into balls. 

Arrange the balls in a heat-resistant container and heat them in the microwave for about 4-5 minutes, or until the shrimp is cooked.

To make the Sweet Chili Peanut Sauce:

In another small bowl, combine the sweet chili sauce, coconut cream, and peanut butter. Mix well.

To caramelize the apples:

Melt the butter in a frying pan over medium-high heat. Add sugar, then add the diced apples to caramelize.

To prepare the Bread and Garnishes (finishing): Preheat the oven with the broiler setting. Fill the hollowed-out bread with the sweet chili peanut sauce. Add half of the shredded white cheddar and place the shrimp apple balls on top. Drizzle the sauce over the balls and sprinkle the remaining cheese over them. Toast the bread in the oven for 3-4 minutes, or until the cheese melts. Remove from the oven and top with caramelized apple and minced mint.

Serve the Cosmic Crisp Apple Cheddar Sausage Balls sliced or torn.
