Cosmic Crisp® Baked Brie

Ingredients

1 roll puff pastry dough
1 wheel of brie cheese, scored or cut on the top
2 tbsp honey fig jelly or local honey 
2 Cosmic Crisp® apples, roughly chopped plus some for serving if using
3 slices cooked bacon, chopped or crumbled 
1 1/2tbsp brown sugar 
3 sprigs rosemary, plus more for garnish if desired 
1 egg and a splash of water (for egg wash)
For serving, apple slices, crackers or pretzels 

Directions

Serves 4-6 as a snack or starter

Prep:10 minutes Total 45mins

No special equipment needed

  1. Set oven to 350 degrees
  2. To a small sheet pan unroll the pastry onto the sheet pan, place the cheese in the center. Spread the jelly or honey on top to work like a glue!
  3. To a small bowl add the cosmic crisp apples, crumbled bacon, brown sugar and rosemary toss together until combined. Place the mixture on top of the cheese.
  4. Fold the pastry dough corners onto the cheese with the mixture on top. Do your best to fold and tuck the corners. Cover with an egg bath, using a rubber brush and bake for 30-45 minutes until a golden brown crust develops all the way around.  Let sit for a few minutes because its going to be like hot buttery apple lava inside!
  5. Serve with some crunchy apples or crackers, enjoy!
