Cosmic Crisp® Apple Turnovers

Ingredients

Dough

  • 2 sticks of unsalted butter
  • 1/2 cup of granulated sugar
  • 1/2 cup of vegetable oil
  • 1 egg
  • ¼ cup plain yogurt
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking powder
  • 1/2 cup of cornstarch
  • 3.5 cups of all-purpose flour

Filling

  • 3 medium-sized apples
  • 3 tablespoons of granulated sugar
  • A handful of chopped walnuts
  • 1 teaspoon cinnamon
  • Topping
  • Powdered Sugar

Directions

  1. For the filling, peel and cut the apples. Grate them using the coarse side of a grater. Finely chop a handful of walnuts using a sharp knife. Transfer the grated apples to a pan and cook them until the liquid evaporates. Then, add sugar, chopped walnuts, and 1 teaspoon of cinnamon. Stir to combine. Once the apples have cooked down and the filling is ready, set it aside.
  2. For the dough, mix together room-temperature butter, sugar, yogurt, egg, vanilla extract, and oil using a spatula. Add, cornstarch and baking powder. Start kneading the dough and gradually add flour until you achieve a smooth and non-sticky consistency.
  3. Once the dough is ready, take one mandarin-sized piece with your hands. Roll each piece into a smooth ball for easier shaping.
  4. Take one of the dough pieces and roll it out into a circle using a rolling pin. Using a small knife, make five parallel cuts lengthwise on the dough. Place a spoonful of the prepared apple filling on the dough and shape it into a crescent by folding the dough over the filling. Repeat the process with the remaining dough and filling, shaping all the cookies.
  5. Arrange the cookies on a baking sheet and bake them in a preheated oven at 350°F (175°C) for 25-30 minutes until they turn slightly golden. Keep an eye on them to ensure they don’t overbake.
  6. Once baked, let the cookies cool on a wire rack. Once they reach room temperature, sprinkle powdered sugar over the cookies.
  7. Your apple turnovers are now ready to be served. Enjoy!
