Cosmic Crisp® Apple Tahini Cookie Skillet (featuring Bob’s Red Mill)


  • 2 eggs, room temperature
  • ½ cup coconut sugar
  • ⅓ cup tahini
  • ¼ cup pure maple syrup
  • ¼ cup salted butter, melted (sub ghee or coconut oil if desired)
  • 2 tbsp dairy-free milk
  • 2 tsp vanilla extract
  • ⅛ tsp almond extract
  • 1 cup Bob’s Red Mill Almond Flour, packed
  • ¼ cup Bob’s Red Mill Organic Coconut Flour
  • ½ tsp baking soda
  • 1 Cosmic Crisp® Apple, thinly sliced
  • Vanilla ice cream, to serve


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large bowl, whisk together the eggs, coconut sugar, tahini, maple syrup, melted butter, milk, vanilla, and almond extract until smooth.
  3. In a separate bowl, whisk together the almond flour, coconut flour, and baking soda. Pour the dry ingredients into the wet ingredients, and fold until completely combined.
  4. Pour the batter into a 10-12″ cast iron skillet and top with the sliced apple.
  5. Bake for 30-35 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  6. Let sit for 10 minutes before enjoying ice cream on top!
