Cosmic Crisp® Apple Galette with Caramelized Onions and Gorgonzola


  • 1 prepared pie crust (store-bought or homemade)
  • 2 Cosmic Crisp® apples, cored and thinly sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup crumbled Gorgonzola cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • Optional: 1 beaten egg for egg wash


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally. This process may take about 15-20 minutes. Season with salt and pepper to taste. Set aside.
  3. Roll out the prepared pie crust on a lightly floured surface to form a circle of about 12 inches (30 cm) in diameter. Transfer the rolled-out pie crust onto a baking sheet lined with parchment paper.
  4. Arrange the caramelized onions evenly over the pie crust, leaving about a 2-inch (5 cm) border.
  5. Layer the Cosmic Crisp® apple slices on top of the onions.
  6. Sprinkle the crumbled Gorgonzola cheese evenly over the apples. Drizzle the honey over the apples and sprinkle with fresh thyme leaves.
  7. Gently fold the edges of the pie crust over the filling, creating a rustic free-form shape.
  8. Optional: Brush the edges of the crust with the beaten egg for a golden finish.
  9. Bake the galette in the preheated oven for about 25-30 minutes or until the crust is golden brown and the apples are tender.
  10. Remove the galette from the oven and let it cool for a few minutes before serving.
  11. Serve warm as a main course or slice into smaller portions for an appetizer or snack.
