In a small bowl, mix together the oats, butter, flour, coconut sugar, cinnamon, nutmeg, and salt. Spread out onto a small baking sheet. Transfer the baking sheet to the oven and bake for about 10-15 minutes or until crisp, stirring halfway through. Let cool.
If desired, mix the greek yogurt with desired amount of honey and set aside until ready to serve.
In a small saucepan, melt the butter. Add the diced apples and cook down for about 5 minutes.
Add the coconut sugar, a pinch of salt, and a pinch of nutmeg. Cook for another 10 minutes, stirring occasionally until softened. Remove from the heat and let cool.
Assemble the parfaits: Layer the yogurt and apples. Top with the crumble mixture and enjoy!
Note: Alternatively, you can use plain granola for the top instead of making your own crumble.
