Cosmic Crisp Apple Celebration Slaw with Cosmic Crisp Apple Cider Vinaigrette

Ingredients

For the Slaw:

  • 3 Cosmic Crisp apples, quartered, cored, thinly sliced or matchstick cut
  • 1/4 head red cabbage, thinly sliced
  • 4 celery ribs, thinly sliced on a diagonal
  • 2 carrots, peeled and shredded
  • 4 sweet mini peppers, thinly sliced OR 1/2 red bell pepper, chopped
  • 4 scallion green onions, thinly sliced on a diagonal OR one large bunch of fresh chives, snipped
  • 3 tablespoons lemon juice
  • Zest of one whole orange

For the Dressing:

  • 1 Cosmic Crisp apple, cored and chopped
  • 1/4 cup apple cider vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon Dijon or other strong mustard
  • 2 teaspoons sugar
  • 1/2 teaspoon Himalayan pink salt
  • 1/4 cup olive oil

Optional Toppings:

  • 1/4 cup pumpkin seeds or sunflower seeds

Directions

  1. In a large bowl, combine the sliced Cosmic Crisp apples, red cabbage, celery ribs, shredded carrots, sweet mini peppers or red bell pepper, and sliced scallions or chives.
  2. Add the lemon juice and orange zest to the bowl with the slaw ingredients. Toss gently to mix everything together.
  3. In a blender or using an immersion blender, puree the chopped Cosmic Crisp apple, apple cider vinegar, lime juice, Dijon mustard, sugar, and Himalayan pink salt until smooth.
  4. Gradually add the olive oil to the blender while mixing until the dressing is well combined.
  5. Pour the dressing over the slaw in the bowl. Stir gently to combine, ensuring all the vegetables are coated with the dressing.
  6. The slaw can be covered and refrigerated for several hours before serving. The dressing will slightly absorb into the apples while keeping the vegetables crisp.
  7. Just before serving, sprinkle the slaw with pumpkin seeds or sunflower seeds for an extra crunch.
