Whisk lemon juice, mustard, and honey to blend; slowly whisk in the oil.
Season with salt and pepper to taste.
Place sliced celery in a bowl of cold water for 20 minutes. Drain celery and pat dry. Combine celery, celery leaves, apples, walnuts, and blue cheese. Add dressing and toss to coat.
