Apple Relish with Charred Green Beans

Ingredients

  • 4 apples, cored and chopped in ½ inch pieces
  • 1 lemon, juiced
  • 2 tablespoons apple cider vinegar
  • ¼ cup sugar
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground coriander
  • 3 to 4 tablespoons olive oil, divided
  • 2 pounds green beans, trimmed and cut in half
  • ½ baguette or 4 slices sourdough, torn and toasted, for serving
  • Dijon mustard, for serving

Directions

  1. In a large bowl, combine together the chopped apples, lemon juice, apple cider vinegar, sugar,
    salt, cumin, cinnamon, and coriander. Stir the mixture together until well combined. Set aside
    and allow the apples to soak up the flavor for at least 30 minutes.
  2. Meanwhile, add half of the olive oil to a large skillet over medium heat. Once the oil begins to
    shimmer, add half of the green beans to the pan and place a heavy cast iron skillet or grill
    weight on top. Cook for 5 minutes, remove the pan or weight and toss the beans together. Place
    the pan or weight back on and continue cooking until the green beans are tender about 5
    minutes.
  3. Remove the green beans from the pan and place them onto a large platter. Spoon the apple
    relish on top and serve with toasted torn bread and a drizzle of dijon mustard.
