Apple Crumble Muffins


  • 1/4 cup flour
  • 1/4 cup coconut sugar
  • 1/2 cup oats
  • 1/2 tsp sea salt
  • 4 tbsp cold butter, cut into cubes
  • 1 3/4 cup flour (plus 2 tbsp to toss with the apple)
  • 2 1/2 tsp baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2/3 cup coconut sugar
  • 2 eggs
  • 1 cup dairy-free milk
  • 1/2 tsp vanilla
  • 1/2 cup butter, melted and cooled
  • 1 Cosmic Crisp® apple, fine dice


  1. Preheat the oven to 375 degrees Fahrenheit and line a muffin pan with liners.
  2. In a small bowl, add all of the crumble topping and use a fork to break up the butter until a crumble forms. Set aside.
  3. In a separate bowl combine the flour, baking powder, salt, and cinnamon. Stir until combined.
  4. In another mixing bowl whisk together the coconut sugar, eggs, milk, vanilla, and melted butter until combined.
  5. Fold the dry ingredients into the wet ingredients until just combined. Do not over mix.
  6. Toss the diced apples with the remaining 2 tablespoons of flour, then fold into the batter.
  7. Divide the batter evenly in the muffin tin, then top each muffin with a generous amount of the crumble.
  8. Bake the muffins for about 25-35 minutes, checking at the 20 minute mark. Once a toothpick is inserted and comes out clean, they are done. Let the muffins cool completely before enjoying!
