Cosmic Crisp® Apple & Pumpkin Bolognese


  • 2 tbsp extra virgin olive oil
  • 1 small sweet onion, diced
  • 1 large carrots, finely diced
  • 2 stalks celery, finely diced
  • 1 Cosmic Crisp® Apple, grated
  • Generous pinch salt and pepper
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • ½ cup dry red wine
  • 1 lb ground beef
  • 1, 24 oz jar marinara sauce of choice
  • 1 cup pumpkin puree
  • 1 lb rigatoni pasta


  1. Heat a large pot over medium heat and add the oil.
  2. Add the onion, carrot, celery, and apple and season with salt and pepper. Saute until the veggies are mostly tender, about 5-7 minutes.
  3. Stir in the garlic and tomato paste and cook for another 2 minutes. Stir in the red wine and deglaze, scraping the bottom of the pot with a wooden spoon. Let cook until most of the wine has evaporated, about 5 minutes.
  4. Add the beef and cook, stirring and breaking up the beef, until cooked through, about 7 minutes. Stir in the marinara sauce and pumpkin puree. Let simmer for 15-20 minutes to allow the flavors to meld.
  5. Meanwhile, cook the pasta according to package directions. Drain and add the pasta to the bolognese, stirring to coat the pasta in the sauce.
  6. Serve hot and enjoy!
