Cosmic Crisp® Apple Olive Oil Cake


  • 1 ½ cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup olive oil
  • ½ cup white sugar
  • ¼ cup brown sugar
  • ¼ cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • Powdered sugar, to top
Apple Layer
  • ¼ cup unsalted butter, melted
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • 1 medium Cosmic Crisp® Apple, sliced


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk together the olive oil, sugars, milk, eggs, and vanilla. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  4. Make the apple layer: In a small bowl, whisk together the ¼ cup melted butter, ½ cup brown sugar, and ½ tsp cinnamon. Pour into the bottom of an 8 inch cake pan lined with parchment paper. Arrange the sliced apple on top of the syrupy mixture.
  5. Gently spread the batter on top of the apples. If using a springform pan, place on a baking sheet to avoid leaking the syrupy bottom into the oven.
  6. Transfer to the oven and bake for 35-45 minutes or until deeply golden brown, set in the center, and a toothpick inserted into the center of the cake comes out completely clean.
  7. Let cool for at least 30 minutes. Release the springform pan if using. Place a large plate on top of the cake and carefully invert the cake onto the plate, removing from the pan.
  8. Dust with powdered sugar if desired, then slice and serve!
