Cosmic Crisp® Apple and Kale Salad with Bacon, Cheese & Avo


  • 1/4 lb. cooked bacon, crumbled
  • 2c shredded cabbage
  • 2c  torn kale
  • 1 large Cosmic Crisp® apple cut up
  • 1/2 c red or sweet onion chopped up
  • 1 Small avocado sliced up
  • 1/2c Goat cheese or Feta cheese
  • 1/4c Mango Jalapeño aged white balsamic vinegar

  1. Cook and cool bacon
  2. Shred cabbage, tear kale. Blend both together in a large bowl.
  3. Cut up apple, chop up avocado and onion. Blend into the cabbage and kale mixture.
  4. Blend in cheese.
  5. Mix in the aged balsamic. Toss well.
  6. Serve on chilled individual plates. For a more complete meal add 1 cup cooked torn chicken (more balsamic vinegar will need to be added.)
  7. Enjoy!
