Cinnamon Cosmic Crisp® Apple Pop Tarts


  • 2 Cosmic Crisp® Apples, finely diced
  • ¼ cup coconut sugar
  • 2 tbsp butter
  • ½ tbsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch ground nutmeg
  • Pinch salt
  • 1 tbsp cornstarch + ¼ cup water
  • 15 oz pie dough, 2 nine inch store bought pie crust


  • 1 cup powdered sugar
  • 1-2 tbsp milk of choice
  • ½ tsp vanilla extract


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Roll out the pie dough and cut into 12 rectangles.
  3. Make the filling: Heat a large skillet over medium heat. Add the apples, coconut sugar, butter, lemon, vanilla, cinnamon, nutmeg, and salt and stir to combine. Saute, stirring occasionally, until the apples are mostly tender and coated in the mixture, about 10-12 minutes. Whisk together the cornstarch and water, then stir into the apple mixture. Cook for another 2-3 minutes to activate the cornstarch. Remove from heat and let cool for 5 minutes.
  4. Meanwhile, make the glaze if desired: Whisk together the powdered sugar, milk, and vanilla, adding another spoonful or so of milk to thin the glaze to desired consistency.
  5. Spoon some of the apple mixture in the center of a rectangle of pie dough. Top with another rectangle of dough, crimping and sealing at the edges. Place on a baking sheet and cut a slit in the top in the center. Repeat with the remaining pie dough and apples, making about 6 pop tarts.
  6. Transfer to the oven and bake for 10-15 minutes or until the dough is cooked and golden brown. Remove and let cool for 5 minutes, then drizzle with the glaze.
