Browned Butter & Cinnamon Oatmeal Cookies with Bob’s Red Mill and Cosmic Crisp® Apple



  1. Brown the butter: Place the butter in a small saucepan over medium-low heat. Let melt, then allow the butter to bubble, stirring occasionally, until browned in color and smells nutty, about 8 minutes total. Let cool completely until the butter is slightly hardened and resembles softened butter.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. Place the butter in a large bowl. Add the sugars and beat with an electric mixer until light and fluffy. Add the eggs, vanilla, cinnamon, salt, and baking soda mixed with water and beat again.
  4. Fold in the flour and oats until just combined.
  5. Toss the diced apple with the cornstarch, then fold into the batter.
  6. Use a cookie scoop to scoop the cookie dough onto a large greased cookie sheet 2 inches apart.
  7. Bake for 10-12 minutes or until golden on the edges and mostly set in the center. Let cool completely and enjoy!
